Should all of the connectors be connected if I have no LED lights or horn, etc. or is it OK that only the throttle, gauge and cruise control button wires be connected?

Tom, it's perfectly OK to just have the important ones connected. You cannot connect the others if you have nothing to connect them to.

Please note that the power breaking switches on the brake levers are an important safety feature and should not be left disconnected. In many countries they're also legally required.

Thanks Alan,
I pulled out the wiring and realized I have everything connected that I can.... eventually, I will need to eliminate the connectors because they short easily if bumped or vibrated.
