John, 3 of those 6S1P packs wired in series would make an 18S1P 59.4V 2.3Ah pack, which if fully charged to 64.8V would be too high for the Pies voltage limit of 60V maximum. A 2.3Ah pack would also not give you much of a range either!
Eight of those packs could be reconfigured to make a 12S4P 39.6V 9.2Ah pack with a fully charged voltage of 43.2V. The eight packs alone would cost $496 and you would still not have any form of battery management system to prevent the cells from becoming overdischarged during use, and to correctly balance them during charging. You would therefore need a LiFePO4 balance charger and some form of battery monitoring device to warn you when the voltage is falling too low.
It would be pretty awkward to install it on your bike and inconvenient to use it on a regular basis, plus it's not exactly what I would call cost effective either.
