How to test the mid-motors? How to test their Windings? How to test their Hall Sensors?

It is hard to test hall sensors and windings on an internal controller ebike hub.  It is best to do impedance testing with the magnets away from the stator.

If you have a magic controller it beeps warnings at you unless it is FUBAR in which case would be the problem with the hub motor.

Poor mans way is to put a voltage load and a resistor on the phase wire youre testing and see if the current draw through each phase are closely matched.

Or buy a sensitive impedance or micro-ohm meter.

You could even test the voltage drop over the windings past a resistor.  The standard meters have milli and micro volts setting.  If the phase wires are shorted the voltage drop over the phases will be much lower than a phase wire that hasnt had the insulator burned away.

If you have a burned motor the most obvious sign is the copper runs dark, close to blackish on the windings and the smell is unmistakable.

Oh and for hall sensors you would be best to make the move to an external controller, because you can test hall sensors easily on an external controller, if they are hooked up to a controller with the 5v rail working correctly you just need to use voltage probes between ground and the hall output to test if they are latching and un-latching.

If you have to test the halls while the wheel is apart, you power the circuit with 5v and play with a magnet and see if you can get the hall to switch both on and off, testing with voltage probes.

Inductance test with a good meter is possible too, each phase has so much inductance and if there is a short, the values vary much from phase to phase.

Could the windings been tested by just measuring the resistance between the phases?

I don't think it can't because every phase has separate winding.

Or you can check the resistance of the windings by finding the the two ends (where the winding end is soldered to normale wiring).

if resistance measurement between phases is impossible (or almost impossible), how is inductance measurement possible?
