Looking For Input- MP3 w/ waterbottle battery

I'm planning to do a new build. On my current bike I'm using the original Magic Pie 26" rear setup, with a 48v 10ah LiFePo4 battery. Top speed is 38 km/h with lots of torque.

For my new build, I'm planning on using a 26" beach cruiser with ape hangers. For the power plant, I'm thinking Magic Pie III, with the 36v 8ah water bottle battery. I was also considering using the Smart Pie just because of it's size, but fear that it won't have enough torque.

Does anyone use the MP3 setup with the water bottle battery? If so, What can I expect for top speed with 36 volts without pedalling(I've always ran 48 volts)? What kind of distance will I get out of a single charge without pedalling? As you can tell, I don't want to have to pedal ever, that's why I think I should go with MP III over SM.
